Okay, my 16 year old is making me make this right now. I didn’t have buttermilk and he offered to make a run to the grocery to pick some up. Now my kids do not like nuts in their banana bread, so if it is for the kids, the nuts are mysteriously absent. If its for you, and you like nuts, add nuts. I do double this recipe sometimes, like now, when my son is taking a loaf a day to school and eating the WHOLE thing. Yes, he gets a side eye from his classmates, no he doesn’t care. Nor is he really willing to share….sigh…..
Recipe:
1/2c crisco or 1 stick oleo (grandma) aka butter
2c sugar (I do 1c sugar and 1c sugar substitute)
1c buttermilk
1 tsp vanilla
2 eggs
1 tsp soda
1tsp baking powder
¼ tsp salt
2 1/2c flour
1 c mashed bananas (the best ones are the ones that are turning black, or almost all black) you know right before you toss them out……
Mix ingredients. Add flour and bananas last. Place in two loaf pans bake at 350 for 25-35 minutes. I like to grease my loaf pans (butter and sprinkle flour) so the loaves will come out once they are cooked. I run a knife around the edges and lift a little and then flip them over on to my cutting board. I also have been known to use the aluminum disposal pans on occasion. Enjoy!
